Crunchy Potato Granola Muesli

Berlin – Do you like it really crunchy in the morning? Then you definitely won’t be able to avoid crunchy muesli, also known as granola. Cereal flakes, nuts and fruit are not just mixed together like muesli, but baked together with honey, agave syrup or maple syrup.

But crispy muesli can be further flavored with potatoes. The producer portal “die-kartoffel.de” gives tips for potato crisp muesli.

For the crispy potato muesli you need:

Two large, mostly waxy potatoes, 75g rolled oats, 100g amaranth popsicles, 250g peanut butter, 50ml coconut oil, 75g walnuts, 50g sunflower seeds, 50 g flaxseed, 100 g agave syrup, 1 teaspoon cinnamon

  • Peel the potatoes and cook them in salted water. Preheat oven to 180 degrees.
  • Then press the potatoes into a bowl with a potato masher.
  • Place 75g coarsely chopped walnuts, 100g amaranth popsicles, 75g oat flakes, 50g sunflower seeds on a baking sheet lined with parchment paper and toast on the center rack for about 10 minutes. . Turn on the oven after five minutes.
  • Pour the flake-walnut mixture directly into a bowl to cool.
  • Mix the mashed potato with the mixture of flakes and walnuts and 50 g of flaxseed.
  • Put 100 g of agave syrup, 50 ml of coconut oil and 250 g of peanut butter in a bowl and heat it in the microwave for 20 seconds or in a water bath. Then stir well.
  • Pour the hot liquid ingredients over the potato chip mixture. Add 1 teaspoon of cinnamon and mix all the ingredients well with your hands.
  • Pour the granola mixture into a baking dish lined with parchment paper and spread evenly. Bake in the oven for about 12 to 15 minutes, remove and let cool.
  • Open the potato granola with your hands and place it in an airtight storage container. It stays there for up to five days.

Advice: Other sweeteners like sugar beet syrup, apple juice concentrate, or honey also work well with granola. dpa
